Ingredients
Crème Cake Mix* 1/50 lb
Ultra-Rich Crème Cake Mix 1/50 lb
All Purpose Shortening 1/50 lb
#6 Imitation Vanilla Flavor 1/8.5lb
*You can also use All Natural Crème Cake Mix 1/50 lb, NSA Crème Cake Mix 1/25 lb or Pud'n-Creme Cake Mix 1/30 lb
Scale/Mix
To make Puerquitos, put the following ingredients into a mixing bowl: 1 lb. 14 oz. of Westco Crème Cake Mix; 12 oz. of BakeSense All Purpose Shortening; ½ oz. of Westco #6 Imitation Vanilla Flavor; 4 oz. of molasses; 4 oz. of eggs; 4 oz. of high gluten flour; and 8 oz. of stone ground wheat flour. Mix together in low speed until smooth (low speed is 2nd speed on a 4-speed machine).
Refrigerate, Roll-Out and Cut
Place the dough in the refrigerator for 1 hour. Then, roll dough to ¼-inch thickness on a well-floured table. Cut out with a pig-shaped cutter.
Pan and Brush
Place cookie cut-outs on a parchment-lined sheet pan, and brush them with a strong egg wash. Let them rest for 15 minutes, then brush again with egg wash.
Bake and Finish
Bake at 370°F for approximately 8-10 minutes until uniform and golden in color. Reduce the baking temperature by 20°-30°F when baking in a rack or convection oven.
