Procedure

Mix 2 minutes in 1st speed & 15 minutes in 2nd speed on a 4 speed mixer.

Dough Temp: 80--82°

Floor Time: 15 minutes.

Scale, round, and rest for 45 minutes.

Shape dough and retard at least 12 hours.

Proof 20-30 minutes at 100°F and 80% humidity.

Bake at 380° F for 26-30 minutes w/20 seconds of steam in rack oven.
