Westco RichBlend Cake Donut Mix  (1/50 LB)

BakeSense Palm Fry Shortening  (1/50 LB)

C'est Vivant Semisweet Chocolate Chips  (1/30 LB)

Westco Coating Sugar  (1/25 LB)

BakeSense Orange Vanilla Rolled Fondant  (1/5 LB)

Directions

Scale and Mix

Scale and mix Westco Richblend Cake Donut Mix according to the instructions on the bag for a small batch. Use your scale to weight all the ingredients, including the water. Use your thermometer to determine the proper water temperature to achieve a dough temperature of 72°F. Let the batter rest for 15 minutes.

Fry

Fry at 375°F for 55-60 seconds per side in BakeSense Palm Fry Shortening. Drain the donuts for 60 seconds.

Finish

Let the donuts cool to about 90°F only. Then roll the donuts in Westco Donut Coating Sugar. Westco Donut Coating Sugar adheres best to the donut when the donut is 85-90°F.

Shape some BakeSense Orange Vanilla Rolled Fondant into noses. Place the nose onto the center of the donut. Place some C’est Vivant Semi-Sweet Chocolate Chips 4000 CT bottom up to make the eyes and mouth.
