The Irish Potato, traditionally a candy of confectioners’ sugar, coconut cream, coconut flakes and rolled in cinnamon to look like a potato, is a once-a-year local St. Patrick’s Day tradition in Philadelphia. With its origins in the city, Insomnia Cookies wants to honor that tradition with a new cookie flavor.

The warm cookie delivery bakery has announced the launch of its new Irish Potato Cookie, with a twist. Available starting March 1, it is a snickerdoodle cookie with coconut flakes and cream cheese chips.

Insomnia is also releasing two more Spring-themed cookies in addition to the Irish Potato – making the lineup a Spring Trio. The limited-time classic Confetti Cookie is a sugar cookie covered with colorful sprinkles, and the Carrot Cake Cookie is a spiced cookie with carrot shreds and raisins - pairing great with cream cheese icing.

All three cookies are available in-store, for delivery and nationwide shipping while supplies last.
