Supplies needed: 4 lbs isomalt, powdered colors (green, orange and blue), 3 pots (2-4 quarts), 1 gallon distilled water, bowl for weighing out sugar, scale that weighs in grams, hair dryer that blows cold or cool air, candy thermometer, 3 small 1 oz containers with lids, matches, heat resistant spatula, wooden spoon, wax paper, blowing pump with tube, box of rubber or latex gloves (tight fitting), tea strainer, small and large silicon mats, 2 lbs sugar, wire whisk, pastry brush, scissors. *Note: Please wear closed toed shoes.
Students will complete a sugar showpiece encompassing all of the techniques learned in class. Space is limited. You must register and pay for the class to ensure your placement.

Cake Top Decorations and Chocolate Yummies. The Wonderful World of Chocolate and Pastillage
December 5-9, 2011, 9:30-4:00.
$800 (Students should wear aprons. All supplies will be provided.)
Students will learn how to temper couverture chocolate, make truffles and pralines with delicious fillings, pipe with chocolate, make three dimensional chocolate decorations, work with transfer sheets and make homemade professional chocolates for Christmas.
