Lysée, the pastry gallery redefining New York’s dessert landscape, and Michelin-starred Caviar Russe, the city’s leading authority on caviar, have teamed up to create a limited-edition pastry that reimagines Valentine’s Day desserts, available through the weekend.
Lysée’s namesake and signature cake, a combination of Korean toasted brown rice mousse, caramel and Elliot pecan sablé, will be transformed into a Valentine’s Day rose topped with Caviar Russe’s osetra caviar pearls and a gold leaf garnish. The caviar-accented brown rice mousse cake will be available as part of Caviar Russe’s pre-fixed Valentine’s Day tasting menu ($600 per person) for the evening as well as à la carte (for $65) in the bar and available for the rest of the weekend while supplies last. Pastry Chef Eunji Lee, known for her creative approach to pastry as edible art through the lens of French, Korean and New York City flavors, and Caviar Russe’s Chef Edgar Panchernikov, bringing an understanding of the nuanced world of caviar, came together to demonstrate that culinary boundaries are meant to be explored, not revered.
