Rebel Donut Bar has established itself in the northeast Minneapolis area through its mini donut flights and wild flavors. After making a name at the area’s Northeast Farmer’s market brewery pop-ups and other events, Rebel is finally opening a brick-and-mortar location later in May.
“It worked out pretty good,” Rebel co-owner Vince Traver tells the Star Tribune. “It was really weird. We just posted a few pictures on Instagram and boom – I still can’t believe it.”
Those pictures, of the company’s delicious mini donuts, have amassed plenty of views. The donuts come in extraordinary flavors such as Cajun Apricot Habanero, Dragonfruit, Rhubarb Crumble, and Chocolate Cucumber Parsley, along with slightly more common gourmet tastes such as Peanut Butter Chocolate and Caramel Pretzel.
The grab-and-go mini donuts were originally unintentional, coming about because of a more efficient process due to a smaller fryer. Once they caught on with customers, Rebel knew it was on to something.
The company is currently waiting on a construction license to finish renovations, but hopes to be ready before the end of the month. In the meantime, it is building up interest through events and through its mission to become involved in the community and meld the things its loves about northeast Minneapolis into the shop.
