A loaded breakfast sandwich emerged victorious in the second annual sandwich competition sponsored by Puratos Corp. The event was held at the Culinary Institute LeNôtre in Houston, where students and alumni were asked to create recipes using Puratos bread ingredients.
Puratos and Culinary Institute LeNôtre culled 8 finalists from a pool of more than 40 entries. The selected sandwiches contained a range of unusual ingredients, including coffee, mango, beer and several different homemade sauces.
Judges for the competition included Puratos executives and Rodolfo Fernandes, a 2010 alumnus of Culinary Institute LeNôtre and author of “You Will Never Be Hungry Again: Healthy, Delicious and Nutritious Foods You Will Love to Eat.” Prizes totaling $2,250 in scholarship were donated by Puratos.
The winner of the competition was Luis Marenco. His loaded breakfast sandwich featured egg, bacon, sausage, cheddar and chimichurri sauce on a multigrain baguette.
Second prize went to Marie-Christine Dieppe. Her Mandalay Medley sandwich featured a salmon burger and mango julienne on an asiago chives roll. Tiara Guard was awarded third prize for a Waldorf chicken salad sandwich made on a green tea raisin roll.
Special mention for creativity went to Richard Whitman for his meatloaf sandwich Bourguignon, on an onion dill roll.
