Fun-Fetti Cake

Ingredients

  • 1 cup+ 2 tbsp butter
  • 6 cups sugar
  • 2 cups oil
  • 8 tsp vanilla
  • 3 cups milk
  • 8 ½ cups all purpose flour
  • 3 tbsp baking powder
  • 1 tbsp salt
  • 18 egg whites
  • 1 cup sprinkles

Directions

  1. Pre heat oven to 350 degrees Fahrenheit 
  2. Using an electric mixer fitted with a paddle attachment, cream butter, and sugar together until light in color and fluffy.
  3. Slowly add oil, vanilla, and milk in three additions. Scrap the sides of bowl between each addition. 
  4. Add flour, baking powder, and salt in two parts. Be sure to scrap the bowl and mix until harmonies.
  5. In a separate bowl, fitted with a whisk attached, beat egg whites to stiff peaks.
  6. Fold egg whites into batter in three parts, do not over mix.
  7. Fold sprinkles last.
  8. Spray three 9-inch cake pans and divide evenly, bake for 20min or until golden brown top.

Cake Batter Ice Cream

Mix

  • 2 cups cake flour
  • 3 cups sugar
  • 1 tbsp salt
  • 2 ½ tsp baking powder
  • ½ tsp baking soda

Add

  • 4 cups heavy cream
  • 4 cups milk
  • 2 ½ tbsp vanilla extract

Directions

  1. Place your dry ingredients in a large mixing bowl. 
  2. Using a whisk, slowly add your wet ingredients.
  3. Once combined, strain through a fine mesh strained if you see lumps of flour.
  4. Spin in your ice cream machine until thick. 
  5. Freeze overnight.
