At Cakes by Edith in Riverton, Utah, they are proud of their award-winning tres leches cakes, which were recently honored with a Best of Utah Reader’s Choice award.

Edith Gallego, who runs the family business with her husband, Jorge, two daughters, Alma and Diana, and son, George, reflects on a current fact that makes her very proud.
“We’ve been open for 18 years. I now make the wedding cakes for the sons and daughters of the families who brought our cakes from the start,” Gallego shares. “That is very special to me. Our customers talk to us like family.”
Today, Cakes by Edith specializes in wedding and celebration cakes, even the special “gender reveal” cakes that are increasingly popular among young couples preparing to have a baby.
“We specialize in crafting delectable pastries that are perfect weddings and other special occasions,” they point out. “Our expert bakers pour their passion and creativity into every treat we create, ensuring that every treat is a delightful experience for our customers.”
For others, tres leches dominates the popularity of cakes made by Esperanza Bakery.
“Our cakes are really good. We mostly make tres leches,” says Jose Rangel of Esperanza Bakery. “We make tres leches cakes all year along.”
Beyond custom cakes, Cakes by Edith features a brochure that lists all dessert options, including mini fruit tarts, chocolate cake pops, mini conchas, chocolate ganache-covered strawberries, mini cheesecake bites, mini orejas, cupcakes, and Mexican wedding cookies.
For cakes, there are 10 flavor options including mocha, red velvet, and tangy orange. There are also more than a dozen options of fillings such as strawberry, pineapple, peaches, walnuts, and dulce de leche.
