Ingredion, Inc. has introduced four pulse-based ingredients that come with a “clean flavor profile” for use in a variety of applications, according to the Westchester-based company. The ingredients are Vitessence Pulse CT 3602 faba bean protein concentrate, Vitessence Pulse CT 1552 pea protein concentrate, Homecraft Pulse CT 1203 pea flour and Homecraft Pulse CT 2201 lentil flour.
The clean flavor profile allows companies to formulate across a range of applications, according to Ingredion. Pulse-based ingredients may boost protein levels in such high-moisture applications as dairy, yogurt, pudding, cheese, beverages, nutritional mixes and smoothies. They may do the same for such low-moisture applications as baked foods, snacks, cereal, bars, pasta, batters and breading applications.
The Vitessence Pulse CT protein concentrates containing peas or faba beans contain 55% to 60% protein on a dry basis. The Homecraft Pulse CT flours containing pea or lentil offer different levels of fiber, starch and protein. The flours are naturally gluten-free and may boost the protein and fiber levels in gluten-free baked foods.
